Southwestern Sweet Potato Griddle

Southwestern Sweet Potato Griddle

Try this super easy, flavorful Southwestern Sweet Potato Griddle next time you are grilling out!
Cook Time: 20 minutes
Cuisine: Mexican, Tex-Mex
Servings: 4

  • Blackstone Griddle

  • 1 lb Ground Beef
  • 1 can Black beans Drained and rinsed
  • 12-16oz bag frozen Sweet Potato Chunks
  • 1 packet taco seasoning (however much water it calls for on the packet)
  • 1 1/2 cups Fiesta blend cheese shredded
  • Optional Sour Cream, tomatos, avocado, lettuce, etc. Whatever you want!

  • Preheat your griddle to medium-high.
  • Drizzle olive oil. Add ground beef on one side, and sweet potatoes on the other.
  • Chop and brown ground beef.
  • At the same time, toss the potatoes often so that they can cook through (to speed this up, you can thaw them a bit ahead of time).
  • Combine the two. Add black beans. Stir to incorporate and spread out.
  • Sprinkle taco seasoning over all. Add the water and mix well, until the sauce forms and coats everything.
  • Once all ingredients are heated through and sweet potatoes are starting to char a little, turn griddle to warm and top with shredded cheese. (If you have a melting hood, this is a good time to use it!)
  • Top however you want! I always do sour cream and tomatoes. Usually I do avocado/guac and some cilatro, too. I jsut didn't have any the day that I photographed this recipe!
