Spaghetti Parmesan

Meat-Free Spaghetti Parmesan

Make meat-free Monday a little more exciting with this easy, flavorful Spaghetti Parm! It's the crispy topping for me!

Equipment

  • Ninja Foodi, Slow cooker or a deep baking dish. (I prefer the Foodi, myself)

Ingredients

  • 1 Large can of Italian style diced tomatoes
  • 1 Can or jar of your favorite spaghetti sauce
  • Italian seasoning to taste (I use about a TBSP)
  • 1 Bag of frozen spinach, microwaved and squeezed out. (You could use fresh and wilt it in a pan first)
  • 1 6oz bag Shredded Parmesan cheese
  • 1.5 cups Panko crumbs
  • 4 TBSP melted butter
  • 1 box spaghetti, cooked and drained

Instructions

  • Combine tomatoes, sauce and seasoning and simmer it for a few. It brings out the flavor! *See notes
  • Add the spinach and stir to combine.
  • Add cooked spaghetti and stir it in well.
  • Top with Parm cheese and cover to melt.
  • Combine Panko crumbs and melted butter.
  • Top with Panko crumb mixture and brown (this is why I LOVE using my Foodi!)

Notes

The best way to enjoy this recipe is using a Ninja Foodi. You can do almost all of the steps together. 
If using a Foodi, you will simmer your sauce and add the pasta on the "sauteé" setting. When it comes time to add the cheese and eventually crumbs, I switch over to the "bake" setting.
If you don't have a Foodi (you need to get one), you can do this in the oven by simmering your sauce on the stove top and then combining everything into a baking dish and using the oven for the cheese/crumb steps. A good Oven-Safe pan works great too! I absolutely love my RockCrock Dutch oven! Stovetop to oven to broiler with no issues!
