If you’ve read our Blackstone Fiesta post, you know two things about us:
I am always looking for ways to get our fix, but put a healthier spin on it. That’s when the idea to mix in sweet potato came to me! I know, it sounds a little weird. But hear me out. It is amazing, and so easy! Top however you want! I always do sour cream and tomatoes. Usually I do avocado/guac and some cilantro, too. I jsut didn’t have any the day that I photographed this recipe!
First up, Preheat your griddle to medium-high.
Drizzle olive oil. Add ground beef on one side, and sweet potatoes on the other.
Chop and brown the ground beef. At the same time, toss the potatoes often so that they can cook through (to speed this up, you can thaw them a bit ahead of time). Having the right Blackstone Tools makes a big difference here! I love my spatulas.
Once the beef is done, combine the two.
Add the black beans.
Stir to incorporate and spread out.
Sprinkle taco seasoning over all.
Add the water and mix well, until the sauce forms and coats everything.
Once all ingredients are heated through and sweet potatoes are starting to char a little, turn your griddle to warm and top with shredded cheese. (If you have a melting hood, this is a good time to use it!)
Top it however you want and crush it! My kids ask for seconds of this, which is a huge win for this mom.
