Let’s Organize the Refrigerator!

Today, let’s organize the refrigerator! If you’re like me, this spot is a source of constant stress. I literally used to cringe opening it. I would fully clean out my fridge every week or so, and yet it still somehow always looked like this:

Nothing really had a place. There was no rhyme or reason. Kids stuck bottles on the door haphazardly. Multiple half-drank cups of juice and milk (hello, waste!). I had to dig around to find anything, which made fixing meals even harder. To sum it up: hot. mess.

Finally, one day I had enough. I was scrolling Amazon looking for some things for my Deals group (you need to join us HERE if you haven’t!), when I came across a killer deal on these fridge organization bins. They had good reviews, were a great price compared to the ones I had been shopping, and I really liked that the set came with two egg trays because I almost always have at least 2 dozen eggs in my house at a time!

I ordered them. I knew it was time to tackle this mess and I needed it desperately. After a little more browsing around, I found this lazy Susan for a killer deal, too! Add to cart!

Two days later (thank you, Amazon Prime!), my goodies arrived. Let me tell you, I was like a kid on Christmas morning! I put on some cartoons for the kids and set to work! Here’s how I did it, and what you can do, too! 

First step: Take everything out! 

Yes, I mean everything! The whole fridge needs to be empty. Throw away anything that is out of date, or that you won’t realistically eat before it goes bad.

Second step: Wipe it down!

Grab some Clorox wipes and scrub until it shines. Take the drawers and bins out and wash them. This is your chance to truly reset, so make sure you do it well!

Third step: Group it.

It’s really helpful to plan this little project on the day before your big grocery run for the week. That way, you have less to move or have sitting out (use a cooler if you think the cleaning part will take you a while!).

You will want to sort out your fridge items based on what works for your family. Some examples could be: Leftovers, salad dressings, sauces, cheese, dairy products, milk, soda/drinks, meats and produce. Sorting while everything is out will help you decide the best use of your bins.

Fourth step: Put it back!

This part is so satisfying for me! I had to play around a bit with how I wanted things to be grouped, based on what I reach for the most and the space in my fridge. You will have to figure out what works for you, but here is what I did!

I have always had a chronic problem with cheese-buying. With it all mashed in the “cheese drawer,” I could never really see what I had on hand. I’d buy more of the same thing and cheese would get moldy and go bad in the drawer. One time, I did a fridge clean out and literally had 20 bags of cheese, you guys. 20. bags. And I threw away half. What a waste of money! I know you can probably relate…

So as I was looking at our space, I had an idea! Why does the cheese have to go in that drawer? Who is dictating to me where I store my queso?? I’m a grown woman! What if I stood my cheese up in one of my bins, always putting the newest in the very back?  That way, when I am planning our grocery pickup for the week (holla, InstaCart and Walmart Grocery), I can easily see what I have and what I need. It also makes rotating way easier. 

I am happy to report that it has been 4 months since fridge overhaul, and I literally never throw out cheese anymore! It is always used up and far less waste. 

Sour cream and yogurt go in the bin beside the cheese. I reach for these often, because we are obsessed with Mexican and my kids love yogurt. Again, super easy to rotate, always putting the old in the front.

So what did I do with my “cheese drawer,” you might ask! I use it as my miscellaneous stuff space, to keep that from cluttering up my shelves. It gets emptied once a week usually, because it is always perishable sides, etc. Mashed potatoes, tortellini, lunch meat, fresh herbs; it is a bit random but I love keeping that stuff out of sight.

Fill the egg bins. This is so helpful for seeing when we need to grab more, and it helps rotate as well! Plus, seeing these pretty bins with my fresh eggs in them is so much more satisfying than those ugly styrofoam or plastic egg cartons!

All of the random salad dressings that cluttered up my door and shelves now have a happy home on the lazy Susan. Dressings could be like cheese for me. Not knowing what we had, I would always buy more. It was nothing for me to have 3-4 open bottles of ranch in there. Now, a quick spin as I am doing my grocery order tells me exactly what I have, and what I need to replenish.

Somehow, this actually makes us eat more salad. I don’t waste dressing, because things don’t get pushed to the back and forgotten. I can see the variety that we have and grab easily!

I adjusted my shelves a bit, to make the best use of space. I needed a bit more room for the dressings, so I was able to make a narrow top shelf space for the egg bins (and garlic).

I put leftovers beside the lazy Susan. We actually go through them pretty quickly now, so this space is plenty. They are at eye-level and easy to grab, so I don’t forget things are in there.

When I buy a larger salad bin, it takes up my entire produce drawer, so it lives on that shelf above it. That entire shelf is my flex-space, honestly. If I am prepping a meal, have a dessert that needs to chill, or just get carried away with the produce for that week, I can store it there. Sometimes I have bins of fresh fruit, at a level where my 3-year-old can grab it herself.

The door is simple, and so much less stressful! Butter in the bin at the top. Milk on the first shelf (whole milk for the baby, 1% for the rest of us!). Next, is coffee creamer and juice; things I reach for daily at a convenient level.

As you move down the door, things are sorted by order of use. I keep beef and chicken broth on hand, because a lot of of my eMeals recipes call for it. (If you haven’t tried eMeals, you need to! Grab a two-week trial HERE). Frequently used sauces and condiments also go on that shelf.

The bottom shelf is reserved for sweets and treats. Syrups, toppings if I have them, etc. I don’t reach for those things nearly as often, so they are lower priority. Plus, out of sight, out of mind, right?? 

I never truly realized how much anxiety and stress the fridge was giving me until I tackled this project. Opening it actually makes me smile (maybe I am weird?) and feel this sense of peace. I am able to look in there, see what we have, and feel so much gratitude for the bounty that the Lord has provided for our family. I am on a journey to reducing the chaos and clutter in our home, and this was a huge step for me. The book “Having a Martha Home, the Mary Way” is life-changing if you haven’t read it yet. I would 10 out of 10 recommending you order a copy!

I am happy to report that we are about 4 months post-fridge-makeover and still maintaining. Once a week, the day before I get groceries, I repeat this process. It takes about 5 minutes now, simply moving things around, wiping and putting them back. Being able to see everything means so much less waste. We actually eat the food, so there is much less to toss.

I hope this gives you the push you need to just do it! Order the stuff and organize the refrigerator! You will feel so much better!

The Prettiest Little Horse Cake (and Cookies, too!)

A couple of months ago, a little girl who is very special to me turned two! She is obsessed with horses and riding, so her mama asked me if I could create a cute horse cake and cookies for her big day at the farm! Of course, this girl loves a good challenge, so I jumped right on it! 

This was her party invitation, and served as the inspiration for the set! (Grab the file HERE)

We just had to do a cute horse head with a floral crown! There was no way around it. The cake is covered in my bakery-style chocolate buttercream icing (it’s so good it’s gone viral! Grab the recipe HERE). The large rosettes are piped on with a Wilton 1M Open star tip. I also used this one for the white flowers. (The white, pink and green are all just regular buttercream).

The other rosettes and swirls for her hair are done with a variety of other Wilton tips, with darker chocolate coloring. Just play around with it and have fun!

Her eyes and ears are made from my super easy homemade modeling chocolate! We love this way more than fondant and it really is mad easy. Grab the recipe HERE.

In hindsight, I may have planned out and used modeling chocolate to make her face, too. I was out of white chocolate, so her face is done with smoothed buttercream this time around.

She just turned out SO cute! The birthday girl loved her and that was what mattered most to me!

What’s a cowgirl party without cowgirl hats?! These are so easy to make, and you could easily jazz them up with royal icing flowers! Put them on cupcakes to just make a few hats to sit out as a snack! Tutorial HERE.

Now, for the cookies. I LOVED making these for sweet Baylor! I had this cute Unicorn head cookie cutter on hand, so I just used that and cut the horn to look like an ear. You could order one of these sweet Horse cookie cutters too if you have time! Etsy also has some cute ones!

I always use my no-spread sugar cookie dough for these and get perfect results every time. Grab that recipe HERE. They are decorated with my viral royal icing (recipe HERE). 

The hair is done with a skinny tip pulled to look like strings. Simple little rosettes to make her crown and she is perfect!

Charred Corn Fiesta Dip (Cowboy Caviar)

Summer is here! For us, that means time outside, cooking dinners on our Blackstone. Having good friends over and enjoying quality, life-giving fellowship. Fiestas and taco nights and warm breezes under the patio lights. I am a firm believer that some of the best fellowship we can have is around delicious food. I recently worked up this yummy twist on traditional cowboy caviar. I’m dubbing it “Charred corn fiesta dip,” because that roasted, fresh, sweet corn flavor really sets it apart! 

A quick trip to your local produce stand for the freshest ingredients, or just hitting up your neighborhood Walmart will get you all that you need. It is so easy, guys!

Look at that fresh, colorful palette! We have our tomato plant rockin’ and I am so excited for my own produce a little later this summer!

First step: remove the corn from the cob. I did this with my Santoku knife, because I misplaced my kernel cutter.  No worries, new one on the way! If you love corn off of the cob, you need to go ahead and order you one. For $12, it is so worth it!

Warm a little olive oil in a Non-stick skillet and add your corn. You will want to char it on medium-high heat, stirring often. It will start to pop and brown a bit as it gets closer to done.

While your corn is roasting, drain and rinse your can of black beans. (These can strainers are awesome for this!)

Finely dice your red onion. I love my Santoku knife for this, too! A food chopper speeds it up even more, but I love the pretty, uniform cuts of hand slicing for dips like this!

Add those to a large serving bowl (or if you are making ahead, just a good mixing bowl with a lid that you can transfer out of later).

Your corn should look about like this when it’s done. It gets a nice caramel flavor that is so yum! Remove it from the heat and let it cool while you do the rest.

Using a sharp knife (again- Santoku here! Only one to wash!), slice your green onions.

Add those to the bowl.

Go ahead and toss in your black beans if they are fully drained.

Now, let me tell you ’bout my best friend. I hate cutting tomatoes. It takes forever. Just not my thing.

This Close & Cut is a game changer in my kitchen. Total. Game. Changer.

Place up to a cup of cherry tomatoes into it at a time (or grapes!).

Close the lid, slice and halve them all in one move! 

This is also amazing for halving chicken breasts uniformly, slicing bagels and so much more! If you don’t have a Close & Cut, let me change your life (ahem- mamas of littles that have to cut everything). Go ahead and order one HERE! You won’t be sorry. Treat yo-self mama!

I wanted my tomatoes diced rather than just halved, so I cut them smaller using my tomato knife.

Add them to your bowl.

Using a pair of kitchen shears, cut up your cilantro and add it to your bowl. You can do as much or as little cilantro as you like. I go heavy!

Go ahead and toss in your charred corn.

Add salt and pepper to taste. I personally love freshly ground pepper for flavor!

Slice your lime in half.

Using a citrus press, add the juice from one full lime to your bowl.

Stir well.

Look like the fanciest hostess in the world! This dip is seriously beautiful, and so addictive!

I personally serve it with restaurant-style tortilla chips! It is great on tip of burrito bowls, tacos and so much more! You could also add diced avocado or green pepper for some extra flavor!

This easy, colorful, flavorful dip will be your go-to entertaining recipe for the summer! Packed with fresh ingredients, it makes a delicious appetizer that you will feel good about serving!

Equipment

  • A good knife
  • Non-stick Skillet
  • Mixing or serving bowl

Ingredients

  • 2-3 Ears Sweet corn You could use frozen corn if fresh isn't in season!
  • 1 pint Cherry or Grape tomatoes
  • 1 bunch Green onions
  • 1 large Red Onion
  • 1 can black beans
  • 1 bunch fresh cilantro
  • 1 lime
  • salt & pepper to taste

Instructions

  • Using a sharp knife or kernel cutter, remove the corn from your cob (skip this step if using frozen corn).
  • Warm a drizzle of olive oil in a non-stick skillet and add your corn. Char on medium-high heat, stirring often. It will start to pop and brown as it gets closer to done.
  • While your corn is roasting, drain and rinse your can of black beans.
  • Finely dice your red onion, and add to your mixing or serving bowl.
  • When your corn is done, remove from heat and let it cool.
  • Using a sharp knife, slice your green onions, and add them to the bowl.
  • Add your black beans to the bowl.
  • Dice your tomatoes and add them to the bowl.
  • Using your kitchen shears, cut up as much cilantro as you like (we like a LOT) and add that to the bowl.
  • Once the corn is cooled some, add that to the bowl, too!
  • Add salt and pepper to taste.
  • Cut your lime in half and add the juice from the full lime to your bowl.
  • Toss and serve with chips!

The LEGO Cake of your Kid’s Dreams

What little boy doesn’t love LEGOs?! A while back, a very sweet friend of mine asked me to create a LEGO cake for her son’s birthday, and I was so thrilled to do it! I wanted the entire thing to be edible, so I started doing a little research.

I was able to grab this awesome candy brick set off of Amazon for a really great price. The bonus is that now I can use it to make gifts for my nephews, ice cubes or fun treats for my own babies! I know over the years these little molds will get tons of mileage, and I am all for that! 

I chose to do a kelly green base color for the cake. This Wilton Kelly Green coloring makes the perfect LEGO green!  A simple, clean white drip and some fun swirls on top helped to break it up! 

For sprinkles, this little primary color blend matches perfectly, if you like this look! 

The bricks are just colored Wilton Candy melts that I poured into the molds and made a big batch of a couple of days before. Play with color mixing to get the colors you want for your cake! You could easily swap in pinks and purples for a more girly cake, etc. Doing them a few days out made cake assembly a breeze, the day of. As an added bonus, I had a huge pile of bricks left over that I was able to package up in a cute bag and give to the birthday boy as a gift!

The little robot man was in this set too, in a few different sizes! There are several different ways to do his face, but I chose to keep it simple. I just drew it on with my FAVORITE edible food pens. You can get fancy with different colors of chocolate to give him clothes, etc if you really wanted to.

Pursuing Peace

The state of our culture brings me literally anything but peace. Scrolling on social media or reading news articles can be downright disheartening. The world that I grew up in is no longer here for my kids. I’m raising them in a totally new and wild place, and it can be pretty overwhelming. Christian values are becoming almost taboo. Chaos, Hatred, division and lawlessness are being pushed on every front from our media to the TV shows that we watch. But there are a few things that Jesus has been speaking over me and I want to share them with you:

1• Jesus told us this would happen. The world rejected Him (and still does). Not one of us should be surprised.
2• This is not our home! If you are in Jesus, you are going somewhere far better. This situation is not a permanent one.
3• You can’t be a light 💡 if there is no darkness to shine in. This is our mission field, and it needs our light more than ever!

Friend, are you struggling to find peace in this world? Here are a few things that have helped me to soak in the beautiful peace that Jesus promises to give us.

1• Get in the Word! First and foremost, we have to saturate our hearts with the truth and position ourselves to hear from Him. If you need good Bible study suggestions, DM me!
2• Get off of Twitter! Disengage from social media debates. Reading some of the stuff honestly makes it so hard for me to love people like Jesus calls me to. Unfollow. Unfriend if necessary 😬
3• Stop reading the news. The media has an agenda 100% of the time. That agenda is basically never to bring you peace, but to feed into the fear and attempt to manipulate you. Don’t let it!
4• Find your tribe. Community is SO important. We cannot do life alone!
5• Pray. Just talk to Him. Nothing fancy, simply cast your burdens.

It’s that time again! Since yesterday was Memorial Day, we spend the day cleaning and had some friends over last night for some sweet fellowship and time offline. It was so needed, but today I am playing catch-up! Let’s dive into this week’s easy meal plan, even if a day late! Serving up tons of delicious dinner options that are quick, easy and kid-friendly, this is one you don’t want to miss out on. Um, yes. I am always looking for new Keto, Low-Carb and Gestational Diabetes-friendly recipes, and this one promises tons of flavor! The main course only has 4 carbs, so it’s a big win! 

If you don’t buy rotisserie chicken often (I do Grocery pickup once a week so I don’t get them just for freshness), you could totally make easy shredded chicken in the Ninja Foodi for this one.

A 30-minute, kid-friendly meal is an easy “add to list” dinner for me! The Close-n-Cut is my BFF for recipes like this, too. I absolutely detest touching raw chicken and am well known for cutting my hands trying to halve the breasts. The Close-N-Cut makes it super easy, you get uniform halves, and your fingers are fully protected! 10 out of 10 recommend! (Side note- you can also halve an entire cup of grapes or cherry tomatoes in one cut with this thing. Game changer!)

We eat a lot of Mexican around here, and I am not one bit sorry about it! I actually have a variation of this exact dish (Recipe HERE) that we make and it is always a win!

Bringing the week home with another slow cooker meal (hello again, Ninja Foodi!). Sundays are busy, being a ministry family. But I also try to make time after all of the Sunday morning hustle and bustle to just chill and enjoy our family. Slow cooker meals just make that so much easier and add to the laid-back vibe of Sunday evenings.

Emmarie Faith 🤍. It took us quite a while to se Emmarie Faith 🤍. It took us quite a while to settle on this one, but it couldn’t be more perfect. My Grandma Tucker- who I loved so very much- was named Emma Marie. My Granddaddy lovingly called her ‘Rie. So this name spelling is a special nod to her. Pronounced like “Emory” but spelled with sentiment. We are so excited to meet this sweet girl in just a couple of months!

We had the wildest day 🤍🐅🐆🦓🐘🦒🦬🦏
If you haven’t looked at my stories, it’s been If you haven’t looked at my stories, it’s been a day. Not at all the way I planned this magical first day but very thankful it wasn’t worse. I’ll update more tomorrow when I have the energy on exactly what happened for those asking, but I just want to brag on this man of ours for a second.

He had me for the first maybe 1/3 of our day and then I had to leave him in the park, by himself, with 2 and 4 year old girls. (I wouldn’t let them come sit at the hospital and waste their day unless it became urgent. He tried). 

This guy didn’t miss a beat. He did all of the princess meet and greets, rode all the girly rides, the potty breaks, the snacks, the parades, all of it. He stepped up and made sure our babies still had the time of their lives and got to do pretty much everything that they wanted. And as a mom, that is the most romantic thing he could ever do for me. He is the best dad and leader and I’m so proud he’s mine. And very thankful I was able to rejoin them for the fireworks 🎆 🥰
