I had major mom brain and published my Tater tot casserole recipe last Monday, so I skipped Meal Plan Monday last week! I definitely missed sharing with you guys. I made up for it by giving you a detailed review of eMeals though, and it’s a must-read! I can’t wait to share this week’s lineup with you!
We are trying to work a little more healthy meals into our rotation, so I picked a bit more from the low-carb and diabetic friendly menus this week. We will see how it goes with the toddler, but I think these all sounded delicious! As usual, only took about 5 minutes to meal plan and another 10 minutes to shop with Walmart pickup! I did it at the park while my kiddos played.

I actually LOVE bell pepper nachos! All of the yummy nacho toppings, but a low carb twist using the peppers for the crunch. This one is totally Gestational Diabetes friendly, too! I couldn’t wait to do this one later in the week, so we are crushing them tonight!
It’s Taco Tuesday! These sounded like such deliciously fun twist on the traditional taco. Plus they are a slow cooker meal, and Tuesdays are my day when I have the girls pretty much entirely by myself, so I love keeping Tuesdays simple!
A low-carb twist on the Philly cheesesteak! Plus I love the flavor that Cast Iron brings!
Cooking tip: Grab yourself a Scoop Loop to seed all of those peppers! It takes about 30 seconds and saves so much mess.
All of the flavors in this dish sound so good! Plus, it is a quick and easy meal, so more family time after dinner. Win, win for this mama!

Sweet and sour anything is my favorite Chinese food! I saw this one and it was a quick add! I’ll likely make regular rice for the family and the cauliflower rice for me.
