Super Easy Tater Tot Casserole

We all need a few of those easy recipes that we stick in our back pocket for last minute weeknight meals. If you have room for one more, this is it! Keep the few things that you need on hand and you’ll be all set for those days when you just don’t feel like making anything fancy. This is also a crowd-pleaser weekend breakfast! 
You will need a bag of frozen tater tots, 2 cups of Colby Jack cheese, minced garlic, a pound of sausage, milk, eggs and salt & pepper to taste. 

 

Preheat your oven to 425° and brown your sausage in a cast iron skillet. Mine is a 12”. (The Mix-N-Chop is fantastic for browning meat! I am a PC consultant 😉 but used it even when I wasn’t). 

 

While that is browning, go ahead and whisk your eggs in a mixing bowl (LOVE my classic batter bowl).

 

Add 2 cups of milk.

 

Add Salt and fresh ground pepper to taste.

 

Add 1/2 tsp of ground mustard. This is the secret ingredient that gives it just a hint of tang!

 

When the sausage is cooked through, add 2 tsp of minced garlic and cook until fragrant, about 3 minutes, stirring constantly. These adjustable measuring spoons are my jam, by the way! Less drawer clutter is a big win in my small kitchen.

 

Turn off the heat and stir  in the frozen tots and cheese. You could use the Crispy Crowns or the larger tots, either is fine. 

 

Pour the egg mixture evenly over it all.

 

Pop in the oven and bake for about an hour, until the eggs are set and the top is golden brown and crispy! If you don’t have a cast iron skillet, you could do this in a regular skillet and transfer to a baking dish. I personally love the flavor and crisp that cast iron gives! And the fact that it goes from stovetop to oven. The RockCrock dutch oven would also be perfect for this meal, and that bad boy goes right into the dishwasher when you’re done!

 

You could easily change up the meat or add onions and peppers for a little flair! This one is so easy, comes together in minutes and is a family favorite!

Equipment

  • Cast Iron Skillet

Ingredients

  • 1 lb Breakfast sausage
  • 2 cups Colby Jack (or cheddar) cheese
  • 1 30 oz bag Frozen Crispy Crown Tater tots
  • 8 large eggs
  • 2 cups milk
  • 1/2 tsp Ground Mustard
  • 2 tsp minced garlic
  • salt & pepper to taste

Instructions

  • Preheat oven to 425 degrees.
  • Brown sausage in a cast iron skillet.
  • While sausage is browning, whisk eggs in a mixing bowl.
  • Add milk, mustard, salt and pepper.
  • Once the sausage is browned, add the minced garlic and cook 3-4 minutes until fragrant. Make sure to stir frequently to avoid burning.
  • Remove the skillet from the heat and stir in the frozen tots and cheese.
  • Pour the egg mixture evenly over the sasage mixture.
  • Bake for about an hour, until the eggs are set and the top is melted, brown and crispy!

Emmarie Faith 🤍. It took us quite a while to se Emmarie Faith 🤍. It took us quite a while to settle on this one, but it couldn’t be more perfect. My Grandma Tucker- who I loved so very much- was named Emma Marie. My Granddaddy lovingly called her ‘Rie. So this name spelling is a special nod to her. Pronounced like “Emory” but spelled with sentiment. We are so excited to meet this sweet girl in just a couple of months!

We had the wildest day 🤍🐅🐆🦓🐘🦒🦬🦏
If you haven’t looked at my stories, it’s been If you haven’t looked at my stories, it’s been a day. Not at all the way I planned this magical first day but very thankful it wasn’t worse. I’ll update more tomorrow when I have the energy on exactly what happened for those asking, but I just want to brag on this man of ours for a second.

He had me for the first maybe 1/3 of our day and then I had to leave him in the park, by himself, with 2 and 4 year old girls. (I wouldn’t let them come sit at the hospital and waste their day unless it became urgent. He tried). 

This guy didn’t miss a beat. He did all of the princess meet and greets, rode all the girly rides, the potty breaks, the snacks, the parades, all of it. He stepped up and made sure our babies still had the time of their lives and got to do pretty much everything that they wanted. And as a mom, that is the most romantic thing he could ever do for me. He is the best dad and leader and I’m so proud he’s mine. And very thankful I was able to rejoin them for the fireworks 🎆 🥰
