Easy Bruschetta Chicken

Here I am again, with another rock-your-world recipe! I made this one up somewhat on the fly the other week and it was an instant hit! Bruschetta is one of our favorite appetizers when we go out, so I figured “why not make it the main course?!”

Because this one goes from stove top to oven, I definitely recommend a Cast Iron Skillet if you have one! Otherwise, you can do a normal skillet and a baking dish! I can tell this will be a regular in the meal rotation around here, and I hope that you love it too.

Easy Bruschetta Chicken

  • Servings: 4-5
  • Time: 30 mins
  • Difficulty: easy
  • Print

Ingredients:

  • 1-1.5lbs chicken breast, cubed
  • 1 TBSP Olive Oil
  • 3 tsp (or however much you like!) of minced garlic
  • 6-7 Roma tomatoes, diced (not too small!)
  • 1 tsp Italian seasoning
  • 5 oz container of Feta Cheese crumbles
  • 3 TBSP balsamic vinegar
  • Salt and Pepper to taste
  • Fresh basil to taste (I use a LOT), cut into strips with kitchen shears
Directions:
  1. Preheat your oven to 375 degrees.
  2. Heat your olive oil in your skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until golden brown and most of the way cooked through.
  3. Add in minced garlic and cook until fragrant (1-2 minutes) stirring constantly so that it won’t burn. Remove from heat.
  4. Stir in tomatoes and Italian seasoning. Drizzle balsamic over the top and place in the oven for 15-20 minutes.
  5. Remove from the oven and top with feta cheese and shredded basil leaves.
  6. Serve immediately! We like to eat it with a side of Uncle Ben’s wild rice! It would also be good with some angel hair pasta! Or even by itself, if you are low-carb. 🙂

Sweet Lilliana is 8ish months old! Mama totally mi Sweet Lilliana is 8ish months old! Mama totally missed the boat on the 7 month pics 🤦🏽‍♀️ #secondkidprobs but goodness gracious she is so loved! She lights up our lives and is the happiest, snuggliest baby! We have made some MAJOR leaps in the last month including crawling, pulling up, standing unassisted for 6-8 seconds sometimes, lots of new sounds and literally the morning after I took these pics, two little teeth popped through on the bottom! She loves her sissy and helping her get into everything and is a huge fan of baby food and puffs. Incredibly thankful and blessed to have my little sugar baby!

Hard to believe that 4 years have gone by since we Hard to believe that 4 years have gone by since we lost our sweet baby. This was easily the darkest season of my life and looking back at it still aches. This season easily could have broken my faith. I could have (and if I’m being honest was tempted to) turned my back on God because i just could not see how He could allow me to go through that pain if He truly loved me.

4 years of perspective has taught me that God allows things in our lives sometimes in order to advance the kingdom. My hurt has allowed others to find healing and even salvation. God took what I perceived as “unloving” and has used it in immense ways that I never could have seen in the moment. My story matters to Him and I am so thankful, not for the loss of my child, but for the opportunity to begin a beautiful ministry that I’ve now been doing for almost 2 years. Not everyone is as open about loss as I have been and that is a very personal decision. But I challenge you if you have been in a hard place and God has brought you through it, invest that hard season. Your story matters too and it very well may be just what your friends or family need to see Jesus.

Sister, if you can relate to that first paragraph at all, please reach out. Trust that He loves you deeply, even if you don’t feel like it in this moment. Your hurt is not unseen. I won’t answer you with “the” phrases that everyone thinks help. I will hold space for you and show you grace as you cope. 💖
